Pumpkin Butterscotch Fudge
It's so yummy!
1 cups granulated sugar
1/2 cup packed light brown sugar
6 Tablespoons butter
1/3 cup Evaporated Milk
1/4 cup Pumpkin
1 teaspoons pumpkin pie spice
1 cup Butterscotch chips
1/2 cup marshmallow cream
1 teaspoons vanilla extract
And an 8 by 8" baking dish lined with parchment
sitting on a cooling rack.
I didn't use a candy thermometer...
Just take a tiny glass of COLD water and drop a small spoon of the mixture inside.
See how it all clumps together like a ball?
I like to roll it around with a finger to check the consistency.
Smooth and rich and creamy!

In a medium size saucepan...
Mix the Sugars, milk, pumpkin, butter and spices…

bring to boil on medium heat.
Stir constantly 10-12 minutes
until it reaches 235* F or soft ball.
Mine took about 10 minutes of rapid boiling.I didn't use a candy thermometer...

Then remove from heat and stir in butterscotch chips, marshmallow, and vanilla.
Stir a minute or so until melted...mine had tiny bits of
butterscotch still in it--making it so GOOD!
Pour into parchment pan.

Let stand 2 hours or completely
cooled.
Cut into 1 inch pieces.
I cut all the edges off first so the pieces would look beautiful.
Some will break...but that's your excuse to test it out!
Serve them immediately, or store in the fridge.
Don't lick the screen! :)
