 Puff Pastry Croque Madame with Avocado Recipe

Make a delicious Croque Madame with crispy puff pastry.  A croque madame is a french sandwich that differs from a croque monsieur by the addition of a fried egg on top.  It's delightful and goes great with some avocado slices.  These make the perfect brunch for Easter.
This is the elevated, much more sophisticated take on eggs and avocado on toast...or a ham and cheese sandwich.  It's a dish that you will love and your family will ask for again and again.

Each egg is stamped with Eggland's Best logo.  I loved the Extra Large eggs!
and Wewalka...I used the puff pastry for this recipe.
The pizza crust is great too!

Ingredients:

Honey Ham
Grated Havarti Cheese
Eggland's Best Extra Large Eggs
Wewalka Puff Pastry
Ripe Avocado
 Set the oven to 425* F.
 Roll out the Puff Pastry dough and use a pizza cutter to cut it into 6 pieces.
 Place the puff pastry squares on the baking sheet.  This Nordic Ware baking sheet with cooling rack is awesome!
 Place 2 slices of ham on each puff pastry square.
 Sprinkle the ham with grated havarti or gruyere cheese.
 Pinch in the corners of the puff pastry.
Bake in the oven for 10 minutes.  Then remove from oven briefly.
 Crack 6 eggs in a frying pan and cook long enough to hold their shape.
 Set one egg on each puff pastry.
 Place back in the oven and bake for 12 minutes, until crispy and golden brown.
 If you like avocado, add a slice or two!  Would be great with hollandaise sauce, but opted not to add those extra calories to mine 😉
It's fresh, buttery and crisp, and slightly gooey with that fried egg.
Serve these warm for a delightful Easter Brunch!
