Begin by cooking up sausage in a skillet. Once cooked through and browned, add 8 beat eggs into the skillet, stirring to scramble. Then remove from heat and top with 1 cup of shredded cheddar cheese.
Unroll a puff pastry sheet and cut into 6 pieces. Then fill the pastry with the egg mixture and fold in the corners. Press the corners together in the center of the package.
Then bake in the oven for about 30 minutes, or until golden brown.
