How to Make Pecan Bars Recipe!
These little magic pecan bars were my favorite part of the holiday!
This recipe is divine!
It's pecan pie in a little bar form.
It's easy to make and takes less than an hour from start to finish.
This post is going to be short, I'm tired and I want the recipe set in stone.
But I'm excited because I love pecan pie...but don't need all the gelatinous goo in the pie filling.
These pecan bars have the shortbread, the sugar and the nuts, so it's the perfect little bite size treat.
It's great for sharing at parties or freezing for later.
I'm posting this for future me--I'll be needing this recipe a few times a year!
Pecan Bar Recipe:
Ingredients:
Shortbread Crust Base:
2 Cups Flour
1/2 Cup Sugar
1/4 tsp Salt
3/4 Cup Butter (cold and cut into small pieces)
Pecan Topping:
3/4 Cup Dark Brown Sugar
1/2 Cup Dark Brown Karo Syrup (no high fructose corn syrup)
3/4 Cup Butter
1/4 Cup Heavy Cream
1/4 tsp Salt
1 Tbsp Vanilla
3 1/2 Cups chopped Pecans
Directions:
Preheat oven to 350*F
Line a 9x13 baking dish with foil or parchment paper.
Mix the shortbread crust ingredients together and pulse in a food processor until dusty.
Pour the crumbs into a 9x13 pan lined with foil.
Press the crumbs into the pan and the corners.
It's very dusty and doesn't make a batter or dough. It's just crumbs. (trust the process)
Then bake in the oven 350* for 20 minutes.
While baking the crust, make the topping.
Combine the sugar, karo, butter, cream and salt in a saucepan and mix on medium heat until boiling.
Then boil for 2 minutes.
Remove from heat and add the vanilla and chopped pecans.
Pour the mixture over the top of the shortbread crust as soon as it comes out of the oven.
I was ready to pour the topping on about 2 minutes before the timer went off.
Cover the crust with the topping and place back in the oven for 25 more minutes.
Remove from oven and let cool down completely.
If the baking dish is covered in foil, it's easy to just lift it right out onto a cutting board and cut into uniform bars.
They are even better the second day--if you can wait that long!

These pecan bars are so yummy, perfect for parties and are the best version of pecan pie!
If you like pecans, these are sweet and just enough salt to make everyone happy.
Except my son that's allergic to nuts...keep these away from him.
