My sister in law taught me this recipe and it's become a family favorite that I've been making for about 15 years!


She made it one year for an Easter party, she formed the scotcharoos in plastic Easter eggs, so they were egg shaped instead of balls.


These are great pressed into a 9x13 inch pan and cut into bars as well...lots of options and super easy and fast!


Scotcharoos are an easy treat and a step up from traditional rice crispy treats with a delicious combination of peanut butter, butterscotch and chocolate.

  • 1 Cup Peanut Butter (Chunky or Creamy--I prefer natural peanut butter)
  • 1 Cup Granulated Sugar (White Sugar)
  • 1 Cup Light Corn Syrup (Karo Syrup)
  • 6 Cups Crispy Rice Cereal
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Butterscotch Chips
  • 1 Cup Chopped Pecans or Nuts (optional)
  • Wax or Parchment Paper

Step 1: Boil Sugars and PB


Mix the cup of corn syrup, cup of sugar and cup of peanut butter in a large saucepan on medium heat.


Stir until smooth, the sugar dissolves and combines and then bring the corn syrup mixture to a boil.


The peanut butter is thick, so boiling it starts to bubble up like hot pots...when the mixture boil is obvious, remove the large pot from the heat.

Step 3: Shape Scotcharoos


Scoop out the peanut butter mixture with a cookie scoop or a spoon and place on wax paper or parchment paper.


Then use hands dipped in cold water (but not dripping) and shape them into balls.


You can pour all the cereal mixture into a baking dish and cut cereal bars instead if desired.

I love the round truffle shape, for some reason they are so much better to me in little individual servings.


But if you are in a hurry, a baking dish makes it much faster and still delicious chewy scotcharoos.


Just spray the baking dish with a little cooking spray or rub a little coconut oil in the pan first.

Step 4: Butterscotch Chocolate Drizzle


For the perfect butterscotch flavor, finish off the best scotcharoos with a combination of chocolate and butterscotch.


This tones down the butterscotch and makes it perfect.


I always use semi-sweet chocolate chips but milk chocolate chips work great too.


Place 1/2 cup of butterscotch chips and 1/2 cup of chocolate chips in a microwave-safe bowl and warm up slowly.


Mix the semisweet chocolate chips and butterscotch until blended and smooth.


Step 4: Butterscotch Chocolate Drizzle  For the perfect butterscotch flavor, finish off the best scotcharoos with a combination of chocolate and butterscotch. Now just dip the balls into the chocolate and set them on parchment to cool...or drizzle some of the melted chocolate over the top of the treats with a spoon.
